Process of Making Barley Malt Grains


The foreign material and barley are separated initially. Afterward, these are graded as per their definitive size. Then the barley is transferred to steel tanks having water inlets and outlet pipes that are helpful in accomplishing various procedures such as vigorous aeration and mixing of barley / water concoction. This is done with the application of compressed air. Known as steeping, this process is stopped when the water content of barley reached to 43-56%. After this germination and kilning processes are carried out.


Germination


At the end of steeping process, the steeped barley is transferred to germinating room or floor for the procedure of 'germination'.

This process is completed in 4 to 7 days; the actual time is dependent on the barley type.

During this period, reductive, oxidative and other enzymatic systems are activated, which have direct involvement in the respiration stage.

Then the requirement is to make protein soluble. This is done by releasing the activate B-amylase or proteolytic enzymes.

With this nearly 40% of total protein is made water-soluble.


Kilning


Germination is stopped by carrying out kilning or drying process at a suitable time that too at optimal degree of starch modification.

Additional reaction is catalyzed with the application of heat. This process develops the color and flavor of Barley Malt Grains

The resulted germinated malt, also known as green malt, is expeditiously and guardedly dried.
